Caesar dressing may be one of the tastiest salad serums around, but not everyone can get behind the idea of raw eggs. For those who are a bit squeamish (or allergic), there’s a simple substitution: cashews.
According to Tommy Werner of Epicurious, a quarter cup of cashews not only imparts rich flavor and silky texture, but actually acts as an emulsifier to keep the dressing from separating.You can use this tip for any dressing that calls for raw egg yolk—just aim for a ratio of 1/4 cup cashews to 1/2 cup olive oil—or you can use the Epicurious recipe for Cashew Caesar Dressing. Dressings made this way will keep up to five days in the fridge, but I doubt they’ll last you that long.
